Sushi is probably the most globally-renowned Japanese dish, but do you know a new type of “sushi” that captured people’s imagination mainly in France in around 2017? It was called “Vegesushi.”

As the name implies, it is nigiri topped with vegetables. This was devised with the aim of encouraging those who do not care for raw fish or vegetarians to try sushi. Using colorful vegetables in season, as well as brown rice and wild rice, “Vegesushi” is photogenic and looks like pretty cakes.
It’s a delicious multiplier effect between traditional Japanese cuisine and a new style of gastronomy. Sounds very tempting!
